Mutsu is a large deep-sea fish that lives in the deep sea. There is a similar species of fish called Kuromitsu”, but it has a similar body to Mutsu and is sometimes mistaken for it. Another characteristic of Mutsu is that there are many fish with the name “Mutsu” and it is difficult to distinguish them all. There are many local names for Mutsu, with some regions calling itRokuno-o”, Mutsume”,Okimutsu”, and “Mutsugoro”.
The peak season for mutsu
Mutsumi” is another name forKuromitsu”, and as its name suggests, it gets its name from its black body color. Kurumutsu is caught throughout the year, but it is said to be the most delicious season from autumn to winter, when the fat is particularly high. The spawning season is said to be from March to May.
Kurumutsu is known as a high-quality fish that is not widely distributed in the market, and is mainly sold at high-end sushi restaurants and Japanese cuisine restaurants. The main production areas are on the Pacific coast from south of Hokkaido to central Honshu, including Iwate, Miyagi, Fukushima Prefecture, Boso Peninsula, Sagami Bay, Izu Oshima, Izu Peninsula, and Shizuoka Prefecture.
