Shiba shrimp is a type of shrimp that lives in Tokyo Bay, western Japan, the Yellow Sea, and the East China Sea. It looks small, about 10cm to 14cm long, and has a very long beard, which makes it distinctive. Also, the longer they live, the whiter they become. The name Shiba shrimp comes from the fact that it was often caught in Shiba, Minato Ward, Tokyo in the past. There are other names for Shiba shrimp, such as white shrimp, mae shrimp, akahige, and white shrimp.
The peak season for shiba-ebi
Shiba shrimp season comes twice a year. Each period has different characteristics.
Early summer to early autumn (June to September): This is the spawning season. The fishing season in the main production areas runs from October after spawning to March to April of the following spring. When it comes to season, small-sized ones used for things like kakiage are in season in winter, and larger ones are in season in spring.
