Sushi is one of Japan’s proudest culinary traditions. There are various styles of sushi, from upscale restaurants to reasonably priced conveyor-belt sushi restaurants. One of the hottest topics these days is “standing sushi. In this issue, we will introduce three “standing sushi restaurants” in Tokyo.
Interesting sushi x baseball concept! Excellent sushi in a casual setting / Bullpen
First up is “Bullpen” in Musashikoyama, which has quickly become a popular restaurant after creating a buzz on SNS since its opening in October 2021.
A bullpen is a place on a baseball field where pitchers practice before a game. This unique restaurant was created based on the concept of “having young sushi chefs practice their skills by nigiri-komi at this restaurant.
The restaurant’s concept is “to let customers enjoy sushi at the counter without being nervous,” so the staff wears rough T-shirts and caps. A brass band plays cheering music inside the restaurant, making you feel as if you are in Koshien.
However, it is by no means just a unique concept. The restaurant is the newest addition to Short Stop Co., Ltd. which leads the popular high-end sushi restaurants Sushi Rinda and Ranmaru in Tokyo and Kyoto.
The main restaurant, Sushi Rinda in Meguro, has gained popularity for its commitment to “Sushi by consistency” while handling items directly from famous tuna wholesaler Yamayako, as well as other wholesalers with whom the restaurant has built a trusting relationship, and from all over Japan.
Because we use the same “special ingredients” for our nigiri that we use at the main restaurant, you can enjoy a first-rate taste in a lively atmosphere that you would never guess from the atmosphere of the restaurant.
For example, “chutoro” (medium fatty tuna). The tuna is procured from Yamayuki, a tuna wholesaler that is the purveyor to ultra-premium restaurants, and is cut into thin slices and layered into three pieces. It is an artistic nigiri that is not only beautiful in appearance and taste, but also in its visual appeal.
The ika-uni (squid urchin), which is a combination of the sticky-sweet white squid and the cool, melting buffoon sea urchin, is also a must-try dish.
The restaurant offers two courses, each consisting of 11 pieces plus a bowl of soup. 4,000 yen course is also available, but if you are visiting, be sure to try the higher grade “Dunk Omakase” (7,000 yen), which allows you to enjoy the finest fish of the day as much as possible. We hope you will enjoy the “Dunk Omakase” (7,000 yen), which is a higher grade of the menu.
The restaurant has a maximum time limit of 70 minutes. If you still want to eat within the time of the course, you can order additional items of your choice, starting from one piece.
There are three daytime hours, called “day games,” and three nighttime hours, called “night games,” for a total of six times a day. Reservations are recommended, but you can also drop in on a whim if a seat is available.
Some women visit alone or with their children, so you can enjoy fine sushi in a casual atmosphere.

Tachigui Sushi Tonari, a moody restaurant by a hard-to-reserve restaurant in Azabujuban
Tachigui Sushi Tonari, a high-end standing sushi restaurant opened in January 2022 in an adjacent building by Azabujuban Hadano Yoshiki, a hard-to-reserve sushi restaurant that has wowed food connoisseurs nationwide. The interior, decorated in black, is stylish and moody.
The restaurant’s unique point is that it is a “state-of-the-art high-end standing sushi restaurant that makes full use of IT technology. Each seat at the counter is lined with an iPad.
It is a smart standing sushi restaurant where orders are taken by iPad and the bill is only accepted by credit card or electronic money cashless.
You can enjoy the same specialties as at the main restaurant, such as “Kurumaebi no Karako-zuke” (858 yen), which is said to be the oldest shrimp nigiri in Edo.
In addition, the restaurant offers a large lineup of original items that are not available at the main restaurant. The fact that you can order any item from a single piece is another point that makes it easy to stop by.
When you come here, be sure to take a look at the sushi that pops up, not unlike that of a high-end sushi restaurant. You will never get tired of the rich lineup, including the “Salad Maki” (330 yen), which is filled with a variety of ingredients, and the “Ohagi” (165 yen), which is a perfect combination of sweet bean paste, vinegared rice, and sesame seeds.
Reservations are made through the restaurant’s official LINE at least 15 minutes prior to entry, and reservations are limited to 60 minutes. The restaurant offers everything from authentic Edo-mae sushi to playful dishes in a moody atmosphere. It is a recommended place to visit alone or on a date.

The restaurant especially offers shellfish items such as “Live Hokayori Shellfish String” (132 yen), “Live White Mussel” (253 yen), and “Live Red Shellfish String” (253 yen). For those who love the crunchy texture of shellfish, such as strings of shellfish, which are usually hard to find, the rich lineup is irresistible.
Another personal hit is the “Hokkai Tako Sucker” (88 yen), a crispy octopus sucker served with a refreshing ponzu sauce!
And to finish off the meal, be sure to try the sumptuous “Sushi-Tsoro Temaki” (308 yen), which includes toro, salmon roe, crab, and konbu (kelp with baby fish).
It is also nice that the restaurant is open all day long from noon to night, so that you can visit it whenever you want to eat delicious sushi, and eat as much as you like of your favorite fish in a quick and easy manner.
